Mid-Week Dinner

Dinner time is often the highlight of the weekday. It’s a time when you get to stop thinking about work, put on your comfy clothes and spend quality time with family (also…food!). On the other hand, coming up with quick and easy meals that are also healthy can sometimes make dinner feel like less of a pleasure and more of a pain.

Here are 5 of our favourite go-to mid week meals that are simple and delicious!


1. Seared Tuna Poke Bowl

Poke bowls are an easy way to combine the perfect mix of lean protein, heart healthy fats and gut-loving fibre. Start with a base of wholegrain carbohydrates (e.g. brown rice, quinoa or soba noodles), add a source of protein (e.g. tuna, salmon or chicken) and top with a range of your favourite vegetables. This seared tuna bowl is a quick, easy and delicious mid-week dinner option which certainly gets our dietitian tick of approval. You can even make leftovers for the next day.

2. Zucchini Noodle & Pesto Chicken Salad

This fresh zucchini noodle salad is an awesome mid-week option that has an awesome balance of healthy fats, lean protein and fibre – and it’s packed with a heap of flavour. If you haven’t made zucchini noodles before – don’t be put off, they’re much easier than you think. We often accompany it with a cool kombucha for some extra gut goodness.

Grain bowls are a really easy meal to pull together as they require minimal prep for a delicious
final product. Keeping brown rice cups on hand is perfect for those nights when you get home
