Peanut Butter Oat Cookies

Makes: 12-15 cookies | Prep time: 10 minutes | Cook time: 15 minutes

Ingredients

  • ¼ cup coconut oil, melted
  • 2 eggs
  • ¾ cup natural peanut butter
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ cup Sunsol oats
  • 1 cup wholemeal flour
  • ½ cup unsalted peanuts, roughly chopped

Method

1.Preheat oven to 170°C and line a large tray with baking paper

2. In a large mixing bowl, whisk together the melted coconut oil, eggs and peanut butter until creamy

3. Add the brown sugar, vanilla, baking soda and mix to combine

4. Add the oats, flour and peanuts and stir together until it becomes a cooking dough

5. Form 2 tablespoon sized balls, flatten slightly and place them on the baking tray

6. Bake in the oven for 10-12 minutes or until golden

7. Allow cookies to cool and then enjoy with a cuppa!
