Coconut Muesli Cookies

Ingredients
  • 1 cup Sunsol Oats
  • ¾ cup Sunsol natural muesli
  • ½ teaspoon baking powder
  • ¼ cup desiccated coconut
  • 1 teaspoon cinnamon, ground
  • 2 tablespoons honey
  • ⅓ cup coconut oil, melted
  • 1 egg
Sauce
  • 2 tbsp soy sauce
  • 2 tbsp white wine vinegar
  • 1 tbsp sesame oil
  • 1 tbsp hoisin sauce
  • 1 tsp garlic
  • 1 tap ginger
  • 2 tbsp water
Methods
  1. Preheat oven to 180ºC and line a tray with baking paper.
  2. Blitz oats in a food processor until finely chopped.
  3. Combine oats, muesli, baking powder, coconut and cinnamon in a bowl. Add in honey, melted coconut oil and egg. Mix to combine.
  4. Place tablespoons of the mixture onto prepared tray to make 10 cookies and gently flatten with a fork.
  5. Bake in the oven for 12-15 minutes or until golden on the edges.
  6. Set aside on the tray for 5 minutes to cool before transferring to a wire rack to cool completely.
Notes
  • When it comes to mueslis, there are many on the market that are loaded with added sugars and other unnecessary ingredients. We love the Sunsol 10+ muesli range as they contain no added sugars and just the good stuff!
