Ham & Vegetable Slice

Serves: 12 – 15 | Prep time: 15 minutes | Cook time: 50 minutes


  • 1 tablespoon extra virgin olive oil
  • 1 brown onion, finely diced
  • 2 garlic cloves, crushed
  • 200g ham off the bone, finely chopped
  • 5 zucchinis, grated, excess juice squeezed out
  • 2/3 cup corn kernels
  • 1 carrot, grated
  • ½ red capsicum, finely diced
  • 1 ¼ cup wholemeal self-raising flour
  • 1 cup grated cheese
  • 4 eggs
  • ¼ bunch parsley, roughly chopped
  • ½ cup milk
  • Pepper, to season


1.  Preheat oven to 180°C and line a 20 x 30cm rectangular dish with baking paper.

2. Heat a frypan over medium heat and add oil. Add onion, garlic and ham and sauté until for 3 – 4 minutes.

3. Place zucchini, corn, carrot, capsicum, flour, cheese and parsley into a large bowl.

4. Whisk eggs and milk together in a separate bowl and then add this to the large bowl. Then add the garlic, onion and ham to the bowl as well.

5. Mix until well combined and pour into baking dish.

6. Cook in the oven for 50 minutes or until a knife comes out clean.
