Shaved Brussel Sprouts Salad with Pine Nuts & Feta

Brussels Sprouts

Serves: 4 – 6 | Prep time: 10 minutes | Cook time: 15 minutes


  • 500g brussels sprouts
  • 2 tablespoon extra virgin olive oil
  • 1 clove garlic, crushed
  • 3 shallots, chopped
  • 2 tbsp pine nuts
  • 1/2 lemon juice
  • Salt and pepper (to season)
  • 50g feta
  • Glazed balsamic vinegar (to serve)


  1. Wash and trim brussels sprouts. Push through food processor so they are shaved finely.
  2. Heat olive oil in a large pan over medium heat. Add garlic and stir for a couple of minutes. Then add the shallots and pine nuts and stir for 3 – 4 minutes.
  3. Add shaved brussels sprouts to pan, turn up heat, cover, and fry for 10 minutes, or until soft. Add bit of water if needed. Squeeze lemon throughout and mix.
  4. Remove from heat and transfer to a plate or bowl. Crumble feta cheese over brussels sprout, drizzle with glazed balsamic vinegar and season with salt and pepper. Option to squeeze additional lemon throughout.
